2007 Private Collection Merlot
Position in Vineyards: Southern and Western slope
Type of Soil: Heavy clay with some gravel
Average Age of Vines: 15 years
Viticulture Practice: Trellised, no irrigation or fertilizer ‘vendage verte’ for low production at optimum ripeness.
Yield per Hectare: 4 tons
Time of Harvest: End of February till end of March 2007
Vinification Details: Selected from best part of the vineyard, fermented with yeast in open tanks at 29°C plus 2 weeks of skin contact after the fermentation
Type & Size of Oak Barrels: 300 litre French oak barrels of which 30 % was new, 50% second fill and 20% third fill
Duration in Wood: 12 months
When Bottled: Selected barrels during December 2008 – no fining, only coarse filtration.
Maturation Potential: > 10 years
Winemaker’s Comments: A refined and elegantly structured Merlot with layers of rich, supple berry fruit flavours hints of mocha chocolate complemented by fine tannins. The wine is an ideal accompaniment to rich, full flavoured meat dishes.
