Blend: Chenin Blanc – 78%
Viognier – 22%
Position in Vineyards: Deep gravel with some clay but well drained.
Average Age of Vines: 6 - 30 years
Viticulture Practice: Trellised, partly irrigated
Yield per Hectare: 5 tons
Time of Harvest: Each cultivar separately during the second
week of February and middle March 2009
Vinification Details: Only healthy grapes were picked early morning whilst
the grape juice was still cool. The juice had six hours
skin contact then pressed. The grape juice settles and
the clear juice fermented cold for intense flavour.
Long lees contact for complexity however no
Malo-lactic fermentation.
Wood Maturation: No Wood

Winemaker’s Comments: This is the 5th vintage for Saxenburg white Guinea Fowl. Our Chenin Blanc vines are 30 years old giving us maturity and complexity. The Viognier adds richness and structure to the blend whilst the Chenin Blanc is fresh and fruity. Guinea Fowl white is a perfect aperitif, great with chicken and salad dishes and will compliment spicy oriental foods too. Serve chilled.
