2009 Le Colombier
Blend: 40% Roussanne, 60% Viognier.
Position in Vineyards: Exposed west, north-west.
Type of Soil: Limestone, well-drained.
Average Age of Vines: 23 - 26 years
Average Output: 20hl/hectare for 3800 plantations per hectare.
Time of Harvest: Second week of September 2009.
Vinification Details: Handpicked grapes. After a light pressing the juice settles for 36 hours at a temperature between 10°C to 12°C. The wine is barreled at the beginning of the fermentation process. Afterwards, the wine ages for twelve months on its sediments, protected from the air in our air-conditioned barrel cellar.
Type & Size of Barrels: French oak - barrels type Bordelaise, containing 40% of new oak.

Maturation Potential: 2012-2015
Winemaker’s Comments: This Côteaux du Languedoc reveals notes of lemon, mango, and pineapple. The nose expresses a beautiful acidity. The wine has vanilla flavors and the after taste leaves a wonderful freshness. Le Colombier is ideal with crustaceans, white meats and creamy risottos.
