Blend: 80% Viognier, 20% Roussanne
Position in Vineyards: Exposed west, north-west.
Type of Soil: Limestone, well-drained.
Average Age of Vines: 20 years
Average Output: 20hl/hectare for 3800 plantations per hectare.
Time of Harvest: 21stAugust for the Viognier and 08th September for the Roussanne.
Vinification Details: The grapes are harvested by hand and sorted on a conveyor belt, before entering the press. The low pressure pressing lasts 3:30hrs; the cold static débourbage lasts 24 hours. The obtained juice is directly filled into barrels through gravity. All the alcoholic fermentation lasts for a total of 9 months.
Type & Size of Barrels: Typical French oak barrels from Bordeaux, of which 90% matures on new oak for 12 months.

Winemaker’s Comments: This wine beautifully embodies the balance between the minerality of the soil at Capion and the elegant taste of fruits, such as litchi. The wine has a wonderful density and lingers in your mouth for a long time.
